Okonomiyaki

This recipe was shared by one of our wonderful volunteers, Kanako. She loves to use the pancake mix in creative ways, and this recipe is no exception!

Often described as a Japanese savory cabbage pancake, Okonomiyaki (literally translating to "grilled as you like it") is one of Japan's ultimate comfort foods and street food icons. It features a batter mixed with lots of shredded green cabbage, pan-fried on a hot griddle until crispy on the outside and tender on the inside, then loaded with savory sauces and toppings.

Ingredients

  • 1 cup ʻUlu Poi Pancake Mix
  • ½ cup dashi (Japanese soup stock), or ½ cup water + ½ tablespoon Hondashi
  • 2 eggs
  • ½ head of cabbage, finely shredded
  • Sliced pork belly
  • A dash of soy sauce
  • Add extra Hondashi (½ teaspoon) if you prefer a stronger flavor
  • Optional: kimchi or beni shoga (pickled red ginger)

Preparation:

In a bowl, combine the ʻUlu Poi Pancake Mix, eggs, and dashi. Mix well until smooth. Add the shredded cabbage and mix gently. Add the kimchi or beni shoga (pickled red ginger) at this stage if desired.

Heat a frying pan over medium heat and lightly oil the surface. Pour the batter into the pan and spread it into a round shape. Place the sliced pork belly on top. Cover with a lid and cook for 4–5 minutes over medium-low heat. Remove the lid, flip the pancake, and cook for another 4 minutes.

Plate and top with okonomiyaki sauce, Japanese mayonnaise, and bonito flakes. Enjoy this delicious dish from Japan!
